Oatmeal Blueberry Muffins

Ingredients
- 1 1/2 cups Quaker quick oatmeal
- 1/2 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup unsweetened almond milk
- 1/2 cup coconut sugar or brown sugar packed
- 2 tbsp honey
- 1/2 cup unsweetened applesauce
- 2 egg whites
- 1 tbsp grape seed oil
- 1 tsp vanilla extract
- 1 cup blueberries
Instructions
- Preheat oven to 400 degrees F (200 degrees C). Line 12 muffin cups with muffin cups
- Gently mix dry ingredients together in a bowl. Mix remaining ingredients (except blueberries) together in a separate bowl. Combine flour mixture with wet ingredients until just combined
- Fold in blueberries
- Fill muffin cups 2/3 full with batter
- Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes
