Oatmeal Blueberry Muffins

Ingredients
  

  • 1 1/2 cups Quaker quick oatmeal
  • 1/2 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsweetened almond milk
  • 1/2 cup coconut sugar or brown sugar packed
  • 2 tbsp honey
  • 1/2 cup unsweetened applesauce
  • 2 egg whites
  • 1 tbsp grape seed oil
  • 1 tsp vanilla extract
  • 1 cup blueberries

Instructions
 

  • Preheat oven to 400 degrees F (200 degrees C). Line 12 muffin cups with muffin cups
  • Gently mix dry ingredients together in a bowl. Mix remaining ingredients (except blueberries) together in a separate bowl. Combine flour mixture with wet ingredients until just combined
  • Fold in blueberries
  • Fill muffin cups 2/3 full with batter
  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes
