Pumpkin Chocolate Chip Cookies

Ingredients
- 3/4 cup whole wheat flour
- 1/4 cup rolled oats
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground nutmeg
- 6 TBSP unsalted butter at room temperature
- 1/2 cup brown sugar
- 1 cup pumpkin puree not pie filling
- 1 large egg
- 1 tsp pure vanilla extract
- 1 cup dark chocolate chips
- ½ cup chopped walnuts or cranberries if you’d like
Instructions
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
- In a medium bowl, combine flour, oats, baking powder and soda, salt, spices
- In a large bowl, beat the butter and sugar until combined.
- Add the pumpkin, egg and vanilla to the butter/sugar mixture.
- Gradually add the dry ingredients to the wet and beat on low.
- Fold in the chocolate chips and walnuts or cranberries.
- Scoop the dough in heaping tablespoons onto the cookie sheet.
- Bake in the center of the oven for 12 minutes until the edges are lightly browned. Remove from the oven and let cool for 5 minutes.
