Pumpkin Chocolate Chip Cookies

Pumpkin Chocolate Chip Cookies

Ingredients
  

  • 3/4 cup whole wheat flour
  • 1/4 cup rolled oats
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 6 TBSP unsalted butter at room temperature
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree not pie filling
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 cup dark chocolate chips
  • ½ cup chopped walnuts or cranberries if you’d like

Instructions
 

  • Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
  • In a medium bowl, combine flour, oats, baking powder and soda, salt, spices
  • In a large bowl, beat the butter and sugar until combined.
  • Add the pumpkin, egg and vanilla to the butter/sugar mixture.
  • Gradually add the dry ingredients to the wet and beat on low.
  • Fold in the chocolate chips and walnuts or cranberries.
  • Scoop the dough in heaping tablespoons onto the cookie sheet.
  • Bake in the center of the oven for 12 minutes until the edges are lightly browned. Remove from the oven and let cool for 5 minutes.
